HIBOU Chardonnay, Napa Valley
WHY WE LOVE IT:
- Pronounced ee-boo, which means owl and represents the wild and natural beauty found in small, pristine vineyards
- Winemaker Jason Driscoll's culinary background is evident in his balanced and refined wines made to be food-friendly
- A single vineyard wine from the heart of Carneros - Hilary’s Vineyard
- Depth, aromatics are so in balance with acidity it's amazing!
WINEMAKER: Jason Driscoll (Hunnicutt, DeSante Wines, Tilth, Chalk Hill, Elsom Cellars)
WHAT WE TASTED:
True to the “black Chardonnay” Burgundian winemaking style, Jason allows the highly concentrated Calera clone fruit to oxidize for 24 hours, turning a frighteningly dark brown before the wine returns to its bright golden color as it ferments. With its ripe fruit core, tangerine zest, and nuttiness this wine is balanced, textured and expressive. Will age beautifully too!
AVA DESIGNATED: Napa Valley
WHAT WE PAIRED:
- Grilled corn with cotija cheese and poblano
- Lobster with cream sauce of course
- Farmhouse cheddar cheese
PERSONALITY:
"I watch the barrel, this living thing, and envision what it will become over its lifespan. I’ve learned to let it be, intervene only as it makes sense, follow its singular story over the course of the year."
TECHNICAL:
- 200 cases produced
- 100% whole cluster fermentation; 100% neutral French oak
- 100% Chardonnay
- 14.2% Alcohol
